Present the shrimp: Rinse the shrimp and dry them with paper towels. Season lightly with salt and pepper.

Cook the shrimp: Add the shrimp to the same layer and cook each side for about 2 minutes, or until they do pink and opaque.
Reduce pan: Pour white wine and lemon juice, scrap any brown bits from the bottom. Boil it for 2-3 minutes to reduce slightly.
Finish and serve: Stir in the bunches of chopped parsley and red chili (if used). Relax the heat for 2 minutes. Serve alternately on ripe pasta or rice, and if desired, garnish with Parmeson.
